I also like his recipe for Caribbean-Style Mango-Habanero Hot Sauce a lot. And Xni-pec. Oh, can't wait for the Habanero crop! Also, if you're interested in making sauerkraut, I've had great success with these spring lids www.walmart.com... (again, the springs work better than weights, in my experience)

They used so many weird cheap shortcuts in their construction but are somehow imbued with this magic where they seemingly guide one's fingers to make lovely sounds.
