And as a general rule - the better quality of base ingredients - the less you need (to feel you've gotten some core nutrients at least). A handful of market greens (which you can get very reasonably priced from farmers' markets usually) being almost always way better than a bag of trucked-in, store-bought spinach, etc.

timFC: 3 bao buns: brisket, fried shrimp, and fried oyster with bacon. It's not traditional Vietnamese, I know. There have been lots of Vietnamese here in New Orleans since the 70s, so Vietnamese and Creole cuisines have been having all sorts of adulterous dalliances for almost half a century, and the result has been amazing (in my opinion). Vietnamese cuisine has become the latest chapter in the ongoing history of Creole cuisine.

Carmichael: Creole, to be precise. Related to Cajun but distinct. NOLA/SE LA in general is Creole, SW LA is Cajun (they were historically two distinct populations, with Cajuns being originally from Canada). But I'd guess that there is Cajun-Vietnamese in those parts, never had it though.

Ike: Do it, man! Be baptized and reborn in the waters of the Mississippi and the bayous! Well, figuratively. You wouldn't want to get in the real Mississip' and the bayous have lots of alligators this year. Like friggin' "Jurassic Park" over here.

Handy: Surprisingly good, actually. NO's always been a progressive-minded town (um, except for you know, everything up till the 1960s) with lots of artists and students and such, so there's quite a few vegetarians and vegans. Green Goddess seems to be the Antoine's of veg/vegan cuisine here.

@mariano: Last time I was in New Orleans (which was the last time I was anywhere but home, back in January) I had some New Orleans Vietnamese cuisine - it was fabulous! And of course Vietnamese food is partly influenced by the years of French occupation, so things sort of go full-circle there.

Food - like music - is based on adapting and modifying things that came before & things that come from other cultures. Almost nothing is 100% original or culturally "pure". If you made music or food that didn't contain any ideas from previously existing music or food, people wouldn't be able to make any sense out of it at all & wouldn't find it very enjoyable (viz: some of the artists featured on this very show)

YETI BOB: Yeah, I think the Vietnamese who first came here chose it deliberately. Very similar climates (hot, humid, watery/swampy), and as you mentioned, the French influence. Catholicism too, since most of the original immigrants were devoutly Catholic South Vietnamese refugees. Carm: we might have crossed paths then! Honeybear: my pleasure, come put on a few pounds!

@Ignatatus - so it's like rubbing styrofoam for you then -- fair enough, life is nuanced, shall we say. There's plenty of stuff that some DJs play that I just can't figure out (or see why they find it all interesting). Fabio's is basically never in that category for me, fortunately
