Ground hog is best roasted with root vegetables. You have to roast it long enough to render the fat. It's almost sweet, about the best meat I've ever had, courtesy of my grandmother. She could make a meal out of anything.

fox squirrel is way better than whistlepig, you need 4 big red nut munchers to make a good stew. use any spicy beef stew recipe. for woodchuck, having sauteed it, better to braise indoors. with a smoker: treat same as chicken or rabbit. I should be charging for this content..
