After last year, I wondered what innovations would be made in gastronomy this year, & I was quite pleased to find that one of the best restaurants this year is Attica in AU from a gentleman from NZ who has one awesome dish that draws on Maori culture, with the stuff baken in a thing under the Earth www.attica.com.au...

I'm sure someone made a typo or misthink somewhere, & Attica's standout dish it used to say was "potato cooked the the soil which it grown," which I thought was a funny thing for a fancy place to say, & now it says, "Potato, cooked in the soil in which it was grown"

Attica doesn't use flax like in traditional Maori hungi, but uses knowing Maori cooking to make what is one of the best current gastronomical experiences possible right now! Hooray on Maori cooking! In modern times, Maori cooking has really emerged as one of the world's best cooking techniques!
