Hello, Stork and swells. Say, barkeep, has that batch of Ruddbones* set up yet?

* Ruddbones: avant-trad self-jelling party shots

750ml Glen Passaic
4 smoked neckbones
2 sub-C lithium ion batteries, Panasonic preferred
10g cadmium red pigment
maraschino cherries

In a non-reactive vessel with a loose-fitting lid, place neckbones, battery, and cadmium pigment. Slowly pour in Glen Passaic, crack a window, and allow to macerate, loosely covered, 24-48 hours. Strain into a hotel pan to a depth of 1/2in to 1in, and refrigerate overnight or until solid and vibrating slightly. Slice into cubes about 1in on a side, and spear each with a maraschino cherry affixed to a toothpick, and serve in a 4oz paper Solo cup. The weight of the cherry will prevent the shot from levitating out of the cup before it is served.

doc, I don't really use a recipe, but I've embraced the hashbrown heresy. Par-bake the potatoes and allow to cool before grating. Mix in salt, onions, and maybe a coupla beaten eggs. Form and fry in shallow oil or, as I did last year, oven fry on sheet pans. The par-baking dries out the potatoes enough that squeezing out, and added starch, are not necessary. Makes a lighter latke, as thin and crisp as you please.

Yeah, read that one, the parboiling made me nervous (I'd think it's easy to overcook them before the rest of the cooking. But the hardest part of making them is squeezing out the moisture from the grated potatos/onions...)

Avatar Swag For Life Member 1:01pm

↳ doctorjazz @12:58
Par-baking, not parboiling. You'd have to try to overcook them. Half an hour at 350, let cool, and Moishe's your uncle. As an added plus, the par-baking keeps the grated potatoes from oxidizing, so they stay white.

I agree, that's why I added onions back in. But, no, you don't have to squeeze them out. Slice the onions fine, and they'll brown up at the right clip when fried. I used a mandoline.
