also there's apparently a "red" and a "white" calliloo. there was an old jamaican guy neighboring me at the community garden that said one is much better than the other. i don't remember which one he said is better.

Callaloo is made from many leafy greens, from water spinach, to pokeweed, even leaves from okra (not a species specific plant, but only for the finally taste). It has to be steamed or boliled many times (due to toxins in the leafs), usually w/ other veggies and spices for flavor.
